Beef Ularthiyathu/ Beef Fry
Ingredients:
1. Beef - 3 lbs (buy a tough inexpensive cut with some fat)
2. Onion - 1 chopped fine
3. Garlic - 1 pod chopped
4. ginger - 1 inch piece chopped
5. Meat masala - 2 tsp crushed(cardamon,cinnamon,fennel,pepper,cloves,star anise)
6. Coriander powder - 3 tbsp
7. chilly powder - 2 tsp
8. turmeric powder - 1/2 tsp
9. Vinegar - 3 tsp
10. Salt - to taste
11. Coconut slices - 1/2 cup
12. Oil - 2 tsp
13. Shallots - 3 sliced thin
14. curry leaves - 2 springs
Method:
Mix together the meat ,chopped onion,ginger,garlic,vinegar,chilly,coriander and turmeric powders, meat masala , curry leaves ,coconut slices and salt (All ingredients other than shallots and oil)
Cook this meat mixture without adding water (the meat will give out some water as it cooks).
This will take around 20 - 30 minutes. Towards the last 5 minutes cook in an open pan if there is gravy.
Once cooked the mixture should be almost dry.
You can freeze or refrigerate the meat like this for later use.
To fry the meat add 2 tbsp of oil in a pan and saute the shallots until golden .
Add in the cooked meat mixture and stir fry on medium flame until it is browned well.
This will take 2o minutes or so.
Add pepper,salt or vinegar as needed.
Coorg Pork Curry/ Pandi Curry
Ingredients:
1 Kg Pork (2 Lbs)
1 tbs Chilly power
1tsp Turmeric power
1tsp Cummin Seeds (Jeera)
8-10 Small Onions or 2 big onions
10-15 cloves of Garlic
3-4 Green Chills
1/2 tsp Mustard seeds
2 tbs Cummin Power
Vinegar or concentrated tamarind juice (or Kachampuli if you can get it)
Salt to taste
Method:
Wash the Pork couple of times, remove excess water. Marinate the pork for 10-15 minutes with salt, red chilly power, and turmeric. In the mean while blend the Onions, Green Chilles,Ginger and a little Cummin seeds. Now fry the Cummin Power until it turns almost black (but be careful not to burn it), add the mustard and the rest of the cummin seeds and fry for few minutes more.Now put the pork which was kept for marination in a pan and let it cook till the excess water is drained. Now add the mixture of Onions, Green Chills, ginger and Cummin seed and let it cook (stir as often as possible to avoid burning). After the pork is cooked, add the fried cummin power and cook for 5 minutes on low flame. Add the Vinegar and we are ready to go.
Mangalore fish pulimunchi / Masala Fish/ Pulimunchi Masala
This was a trial recipe inspired by a dish I once had at a Mangalore restaurant ... it turned out real good .
Fish - Pomfret, Clean and make slits on it and marinate in a mixture of chilly,turmeric,pepper powder , salt and vinegar.
Shallow fry the fish .
For the masala - shallots,ginger,garlic,tomato,puli and green onion for garnish.
Method:
Heat oil and add the shallots,ginger,garlic and saute well then add in chilly powder,coriander powder,turmeric powder and saute until raw smell is gone.
Add tomatoes and saute until oil separates.
Add tamarind to adjust sourness, if the tomato is sour you might not even need the puli.
Add the fried fish into this masala and add 1/2 cup water and let it simmer until the water is absorbed and the fish is coated with masala.
Garnish with spring onion and squeeze some lime juice on it.
My vava who is my greatest critics gave me a five star for this one ....
Banana Chips (Mom's recipe)
Ingredients:
oil for deep frying
1/4 tsp turmeric powder
salt according to taste
5-6 raw bananas
Method
Take off and put bananas in plenty of salted iced water.
Slice bananas with a chip slicer into water, mix in in turmeric.
Keep for 10 minutes, remove out water fully.
Spread out on a kitchen cloth to take off moisture.
Heat up oil in a wok till smoky.
Fry banana slices in one-layer batches for a minute or two or until crisp.
Lift chips out with slotted spoon and remove on paper towels.
Sprinkle with salt before serving.
Moru curry/Butter milk curry
Ingredients
Ash gourd / yam - 1/2 kg
small onions - 5 peeled,
coconut grated - 1 cup,
turmeric powder - 1/2 tea spoon,
Curd - 1 cup or thick butter milk 1 and 1/2 cup,
green chilly - 2,
mustard seeds - 1/2 tea spoon,
fenugreek seeds - 1/4 tea spoon,
cumin seeds - 1/4 tea spoon,
red chillies - 2,
coconut oil - 1 table spoon,
curry leaves ,
salt.
Method
Peel and cut the vegetables.
Put in a pan and add water just to cover the veg.
Add turmeric powder, salt, green chillies.
Cook till done.
Blend coconut with cumin seeds, small onions and curd.
Blend till smooth.
Add this to cooked vegetables.
Heat and remove from fire when it begin to boil.
Don't boil this.
Heat coconut oil and let mustard seeds splutter.
Add fenugreek seeds.
Then add red chillies cut, curry leaves.
Pour this into curry.
Have with rice.

Chicken Fry /Kozhi varuthathu (Mom's Recipies)
Ingredients:
Whole chicken with bones cut into smallish pieces - 1
Chilly powder - 2 tbsp
Turmeric powder - 1/2 tsp
Ginger garlic paste - 1 tbsp(you can use finely chopped ginger and garlic instead)
Vinegar - 2 tbsp
Salt- to taste
pepper powder - 1/2 tsp
Curry leaves - 5 springs
Oil - to shallow fry
Method:
Make a thick paste of chilly powder,turmeric powder,salt,vinegar , pepper powder and ginger garlic paste.
Marinate the cleaned cut drained chicken pieces with this paste for few hours or even overnight.
Heat oil in a nonstick pan and shallow fry the chicken pieces until browned and cooked.
If you are using broiler chicken you can fry the chicken straight.If you are using chicken that takes longer to cook you can precook the marinated chicken until the juices evaporate than then proceed to fry it.
